I just had the same problem than you (i am using smeserver which is
based on centos). I had to install QT4 from sources and then to copy
the .pc files from the qt4 install directory to the pkg-config
directory :
cp /usr/local/Trolltech/Qt-4.3.0/lib/pkgconfig/*.pc /usr/lib/pkgconfig/
Then
Make sure your passwords are the same in bconsole.conf and
bacula-dir.conf
Also take a look at the maximum number of connections in bacula-dir.conf

You can do a database by database dump with mysqldump (see man
mysqldump). I suppose you could do what you want by setting multiple
jobs:
First job has :
Client Run Before Job = mysqldump database1 file-1
Fileset = file-1-fs
Client Run After Job = rm file-1
Second job has :
Client Run
