I'm a new BBDB user and am curious to know typical customizations / the
way in which folks actually use the package.
I've read the BBDB info nodes, but I use pretty much the default setup

No, it's a problem with the address. My testcases show that 99% of the
time, " - " is of the form "Some Name - Some Pinhead Slogan". Take out
the spaces around the - and mail-extr will parse it

Okay, so this is not related to combining databases, but I would like
to know how to change bbdb so that it does not think that Rui-Tao
Dong's name is just "Rui"?
