Isn't there a option on the file menu when reading an email in outlook to save it as something else: File | Save as... In that dialogue you would tab tosave as, and there should be an option for text files, which would be the simplest/smallest option, and those text files could then either be

No worries. It's just one of the keystrokes that most sighted people don't seem to know/remember either as such, and the other 'useful' one is that when browsing files/shortcuts on the desktop, shift + delete will simply delete the files without putting them firstly into the recycle bin.
