Are you using CampusEAI's myCampus product? If so, they pre-install CAS
3.3.5 (and I'm assured that a later release of CAS will be used in their
next product update) for you.
Personally, I found it easiest to follow the directions
gotten with the installation?

How far has your college gotten with the installation?
We've had an enterprise CAS install for several years, and we have
BEIS integration working in our dev environment that will be promoted
to production by fall 2012 if I'm not mistaken. I'm not sure what
particular integration with Banner

At my university, we use the Maven overlay method, which makes it easy to
only customize the bits that you need (configs, theme code, etc.):

Do you need BEIS integration? That complicates matters considerably.
