Could the real lab require using encrypted or authenticated voicemail ports
between unity connection and call manager or is voice security not part of
the blueprint? Does anyone have a good guide on setting up secure voice
ports to Unity Connection?

Having only two gateways sort of distorts the power of the
local-route-groups unless you are looking at 911 which would only want to go
out of own gateway.
rp:911 -> rl-local (rg:local-route-group)
However if you had
rg-all-us-gateways = BR1-RTR + HQ-RTR
The you could have:
rp: \+ --

i have integrated callmanager 6.0 with unity connection 1.0 (UC)
after importing the users to the UC (tools -import users), importing the
users for voicemail, i get the message 'credential check failed'
when i try to create it from the callmanager by clicking on create cisco

I like E164 and standard-local-route-groups.
Assuming that you have used the line/device method for granting permissions
on who dials where.
For outgoing calls :
Create translation patterns to get local branch plan --> E164 (with a + at
the front). These will be site specific so people in the US
