You are missing dialer-group 1 statement under the async interface and
dialer-list 1 protocol ip permit in the global config mode (I am assuming).
When you are done configuring both sites, try pinging with debug ppp nego
and debug ppp auth. Also, run debug dialer and see what happens.

You have to use DDR and dialer profiles and specify interesting traffic.

I currently have a 2611 with a 3COM modem connected to the AUX port.
The below is my configuration, I suppose what I need is a way to have the
router tell the modem to dial the details in my async interface. I'm not
exactly sure what I've done wrong but somethings not right :)
