I may have misunderstood your router configs and your original design, but
it looked like you have r1e0 connected to r2e0, r1s0 to r2s0, and r1s1 to
r2s1. If this isn't the case, then never mind, ignore what I said!

Yes, you could use /24 subnet masks, and with your addressing scheme this
would be the proper thing to do. Address them like this:
Router1:
Ethernet 0 10.0.1.1 255.255.255.0
Serial 010.0.2.1 255.255.255.0
Serial 110.0.3.1 255.255.255.0
Router 2:
Ethernet 0 10.0.1.2 255.25
