that by putting in sealed bulkhead fittings where the water lines came

There's no plumbing aft of the shower. Def not on the starboard side beyond
the water heater.
Aside from that, It would be interesting to know exactly where these boats
were designed to sail. The cruiser 37+ specifically. It's also notable how
they change/de-evolve relative to how badly

Should be on the starboard side in the cockpit. The “backside” of it is inside
the locker where your fuel fill is.

Be careful, getting into that plumbing could open up a big can of worms. If you
have the same gray pre-pex type flexible PVC tubing and fittings, a lot of ours
have been found to be in poor shape, cracking and weeping
