You can make any of them and just not include the cheese.

You could just make the recipe, omitting the cheese. Try ground mustard or dill
as flavoring. I also put sautéed onions in mine.

Something with heavy cream or whole milk and a mix of spices?
I know that's not much help. I've never seen a scalloped potatoes recipe
that doesn't have some kind of cheese, whether it's cheddar or something

Scalloped potatoes don't have cheese. Potatoes au gratin do. This recipe is
great for sweet potatoes. It would work for regular. You can substitute other
seasonings for the smoked Chile. I don't think you need more than salt and
pepper.

Scalloped potatoes
1/4 cup chopped onion
1/4 cup butter
1/4 cup all-purpose flour
2-1/2 cups milk
5 large potatoes peeled and thinly sliced (5 cups)
To make sauce, cook onion and butter until tender but not brown. Stir in

yummy dish. I also used vegetable broth and increased the flour to 1/3 cup to
make a veggan version of this recipe.
