(set in etc/courier/me?)

There he probably can enter his emailaddress as sender address there.
Only way you can make courier to relay is enter the IP-Address(es) into
smtpaccess. And I would not recommend that.

Many MTA's are doing reverse lookups now to filter spam. They compare the
result to the hostname given by the MTA
You need a PTR record for reverse lookup that will resolve the ipaddress
of the sending MTA to it's hostname.
