However, none of them should really be required to build darktable, and
some just enable features that most users won't need (LUA e.g.). But I
guess it doesn't hurt either...

dakrtable picks up the language from your system, so if that one is
dutch it should be fine.
Otherwise you can start darktable from commandline with
LANG=XX darktable
where XX is your appropriate language code.
