Further down the page in the section on "Git version", there's a line which
says "You can find a list of them here."
...but it doesn't contain a link.

According to this error log, LLVM not being found is just a warning --
what is actually tripping the build up is the absence of the XML parsing
program, 'xmllint'.
Have you tried installing all the packages in the list of dependencies
on Darktable's install page (https://www.darktable.org/install/

Yes, I'm finally taking the plunge and trying to get my head around git and
all that comes with that. :)
I've created a new user profile on my linux box just so I don't screw up my
main user profile.

My first thought on your suggestion is the revision control system
would need integrating with darktable somehow.
