I think I got it.
The Icedove is run by
icedove -P
in the GNOME. I didn't make it, it was installed this way automatically.
If I remove the -P then Icedove starts normally. I'd assume the -P
forces profile selection mode.
So there might be a bug in the ackage. Please check the execution

You're right! That was the problem. The icons are similar, and since I
has been quite concerned by the mere replacement of the TB, I haven't
noticed the difference, since I never met IceDove before.
I'm happy we solved it finally :-)
You can close it, or is there some even more distinct icon

one works well, however as You say, it should not do it..

From which thunderbird version did you upgrade from? I don't see any
