Denemo a couple of years ago. There was a thread about the topic in this
mailing list back then in 2016/2017.

Well, I put the Gregorian chant stuff into Denemo, but I confess I had
a struggle to find it - the Command Center didn't help :( It seems it's
all tucked away in a palette. I see a small amount of support for chant

I can reproduce this the following way:
* delete my .denemo-2.0.21 directory
* launch denemo and decide not to take over my old settings
* View > Palettes > Select a palette to show > Gregorian Chant
* Click New on the palette
* Click Do1 on the palette
* insert notes with the PC keyboar

looking - are there some easy to understand techniques for getting it

I notice that LilyPond defaults to red staff lines in Gregorian Chant.
Your code uses
\override Staff.StaffSymbol.color = #(x11-color 'black)
to make this black, however it doesn't alter the ledger line color.
There is a line in live-score.ily which sets the color of everything
black - I guess

It occurred to me that a template could set the punctum as the snippet
for note entry. So now New from the Gregorian Chant palette (or loading
File->Open Standard Template->EarlyMusic->GregorianChant.denem
