an easy solution is just to add a second assetstore and set it as
incoming. That means the old one will be still used to access the
existing items and new items will be added only to the new one
(incoming). In dspace.cfg, you would set:

We are trying to migrate from dspace 3.2 to 4 running in Ubuntu using JSPUI. We
have around 8 collections and I see the "Request a copy" button for items in
only 2 of my collections and it came by default when I installed and restored

it seems like a Solr's problem.
A solution to your problem is to copy the folder
"[dspace-installation-directory]\webapps\solr" to "C:\Program Files\Apache
Software Foundation\Apache Tomcat (your version)\webapps" (or wherever is
the Tomcat's installation directory).
