Rob, you want to set the "Deliver from Quarantine Security" to
"Compatability Mode", this is found in the General Options of the Forefront
security admin console or during install.

The self-signed cert will not work for the iPhone. If you have a internal CA
you will need to try and get that root certificate on the iphones, which may
not be easy to do. Best bet is to use a 3rd party certificate so the devices
already have the root cert.

I've had some problems with my self signed certificate while syncing a windows
mobile.
Putting in a CA signed solved my troubles.
So it would surprise me if an iPhone also has this problem.

Self-signed certificate that comes with Exchange 2007. Will this present a
problem?
I have no problems otherwise with firewall configuration of TCP port 443, so
if it really is as simple as pointing the device to the OWA
Pretty straight forward. Get a certificate on the server; allow port 443
access from the internet to the server. If you can hit the OWA site then the
device should also work.

Do you have Outlook web access set up with https? If so just point the IPhones
at the same URL and make sure active-sync is enabled for the mailbox. It should
be, I believe it is by default. For us it was as easy as that.
