Has anyone installed the Exchange 2010 SP2 UR1 update with Unity 8.0? UR1 is
not specifically listed in the compatibility matrix as being supported (I'm not
sure it would be).

But if you *un-share* the mailbox and leave just one person attached to it,
test for a day, add another person, test for the dayetc. This might
help you narrow down if it's the mailbox itself or perhaps one of the
sharees that are causing your issues.
