And with ESX you can take snapshots so if you fsck up and don't want to
start from scratch, but roll back it's easier...

We run a virtual Ex2K7 and AD purely for testing in VM. The backend is
on physical hardware but only because it needs SAN connectivity.
Why would you only be able to use 32-bit Ex2K7? Just buy a license for
VMWare Workstation and you're good to go.

I run about a 8-12 vm ESX server with a win2k3r2 dc and exchange 2007 on a
win2k3r2 64 bit server. My dc has 512meg ram and my exchange server has ~1.5gb.
This is all off a core 2 duo 1.8 GHz (slow) and I think 6gig ram. There are a
few other vm's running windows, CentOS and FreeBSD on it...
