Rebuild the the various pango1 packages, maybe (I'll admit that nothing
else jumps out at me).

So much for that idea...
I just installed emacs21-gtk on my system - same version of gtk+2 - and
it worked for me, so it's not just the new gtk+2 version. Check the
CrashReporter logs (e.g. in the OSX Console utility) and see if there's
anything that stands out.
