Sorry I'm late to the party and I'm not even sure if I can be helpful :-)
We, too, are using FluidSynth's MIDI file reading and playing capabilities so

instrument mapping. Let's say we start with one
specific GM soundfont and do the mapping so everyone
is on the same page here. Tha could be done in code
or configuratin file.
