Is there a possibility to "detect" or "scan" which DTMF mode is sent by the
calling CPE so that I can establish logical interrogation in my configuration?

The reason are the IP-addresses. I don't want to publish them to the whole
world.

In another word, User1(another SIP Proxy) want to call User2(FS),
and User1 doesn't register to FS and User2 doesn't register to 163.28.xx.xx.

once you send "myevents" you lock on to only that channel's events despite
any other *events* command.
you may want to use the filter feature on the channel's uuid instead.
