Hi Raul,
I just answered that question!
When you are flying or stopped, hit tab and go to the broom and hit enter.
The broom enter is a toggle so every time you hit it within the inventory
it toggles the broom on and off.
Of course if it is a normal broom it just sweeps the floor.

I admit that I feel rather stupid here. If this answer is in the manual,
please redirect me there, but I could not find it. If Sarah is traveling by
broom, how can I make her walk again? Must I drop the broom from the
inventory? And, would I want her to walk again, or is traveling by broom the
aardwolf. You still have to look around for answers but that's the point of
it. It comes with a newbie guide and speedwalks but still, you'l need
people's help.
