launch simultaneosly the creation of new datastores. I've a huge volum of
data and I need to optmize my time.

Yes, you can open multiple windows or tabs in your browser and work with
different datastores. (Be careful about opening the same store in multiple
windows as there's no protection against overwriting your own changes.)

pyramid process is already started. I need to launch another pyramid
process but if I try to open a second tab but it doesn't works properly.

Since it looks like you want separate polygons for the resultants after the
intersection, I think you'll need to look at using Clip, passing it the
buffer of the query state.
I haven't tried this, though - it will be interesting to hear whether it
works for you.
As for CollectGeometries against
Definitely a bug in geoserver's WMS.getMaxAnimationTime(). Looks to be
fixed on trunk as a side effect of the new security subsystem (so says
the commit logs).
Wondering how's it related to gwc though. Before deleting the tiles
you were able of restarting geoserver?
How did you delete the tiles?
Thanks for the input. I moved from 2.1.3 to 2.1.4 and that didn't
help. Removed all the *gwc* jars, and that keeps gwc from starting up,
but GS still doesn't start, with this error in the logs:
