By looking at the logs, it kind of seems GeoServer is missing the plugin providing the store you were using. If it's the case of Oracle, recent versions of GeoServer stopped shipping the JDBC driver because of redistribution restrictions, did you add the JDBC driver manually in the WEB-INF/lib man
