If I remove ST_Simplify I can confirmed that the geometries are correct and
not empty. So my next question would be: is there a way to force Geoserver
not to apply ST_Simplify for this layer? Do you have other suggestions?

For the future reference, if someone faces the same, it was a typo when
defining encoding in JAVA_OPTS.
Adding -Dfile.encoding=UTF-8 to JAVA_OPTS in catalina.sh solved the problem.

I was able to solve this... it was a problem on Openlayers side and not on
Geoserver. I was sending polygon and linestring instead of multipolygon and
multilinestring on the request sent by the openlayers client.

I've tried hide mode, but however, using this approach, no layer is
displayed in any type of role.
