You should be able to adjust the version used by changing the pom.xml
information in GeoServer, or by removing the dependency completely (so it
always gets the version defined and tested by GeoTools).

Not sure I understand, it is subject to the same security restrictions as
any other layer (indeed this was a security issue to ensure this was the
case some years ago).
You can set up filter chains using the URL pattern of the geoserver/gwc/ if
you wish to impose more restrictions.

I have not used mbtiles recently, but I often use geoserver to create
vector tiles for layer groups (that is kind of the point for vector tiles).
Could you try reproducing the problem with the sample data directory, and
submit a bug report that can be reproduced.

That is fine you can make a setenv.bat, or adjust options in the tomcat
manager thing under Java options.

I find that each different version of the WCS specification is a bit
different. What you describe is normal for an odd standard.
Try the WCS 2 also?
The first versions of the spec returned that document, and the document had
a link to the image output.
