Yes, I still use 2003 with no problems, at all, in both 2K and XP. I still
like speed disk, and the scheduler although I typically install a different
anti virus program... but there is no reason why you shouldn't use the one
that comes with 2003.

Yes - just load VNC on the Linux box and connect to it from any VNC
client (windows, Linux, Palm, etc - they will all work.)
