we tried running game servers in vmware and it was terrible.
you should use a kernel level virtualizer (maybe like virtuozzo), not a
whole machine virtualizer.

I've used it at work for production servers ( MSSQL, Exchange, ... ) and it
works like a charm. We're moving to MS Hyper-V starting in Feb 09, not my
decision, and VMWare has always seemed to perform better than MS in the
Virtualization realm.
