physical box, but is it possible to use a different steam account for each
HLDS process on each box, so that all may auto-update on their own?

will leave the definition of what you "should" do to you, but I think 1.16

Alfred made the comment on the Steampowered.com forums that Steam account
for servers at least are intended to be one account per machine, not per
hlds server. I'm not sure what the situation is on the client end of
steam.
