Sporadically, but not consistently. I will watch for this as it occasionally
happened before update too. Usually if I close Outlook and relaunch it it
seems to fix the issue

Yes, whenever I open Outlook after exiting, then the unread messages
count
does show up as before, but but it always goes away after a bit.
