We do have this config re-enable in the F-OEM-5.6, it should be in
debian.oem, not where debian.master that I checked.

It looks like the AUFS config support was added in commit f9ec9ce6
"UBUNTU: [Config] enable aufs"
So this might be just a decision making, do we need to re-enable this
support in F-OEM-5.6

CONFIG_AUFS_FS was removed in commit 6940426c "UBUNTU: [Config]
updateconfigs after rebase to 5.5-rc1" in the OEM 5.6 Focal tree.
Next is to figure out why it's removed there.
We still have aufs code in the tree (but not in Linus's tree upstream, so maybe
it's intended.)
