Lowering the seat is not likely to make it more visually stimulating. Sitting less reclined or more upright is what I imagine you seek and that does require head room. You can a bit more visual experience by the addition of 2 side windows but this requires moving the head rest panel rearwards.

Ben, To raise the canopy height, you'll need to raise the aft deck for sure. You can potentially keep the forward deck the same but will also need to modify your current canopy frame. Could be a lot of work but certainly doable. The KR Manual gave a pretty good description during building
