My thoughts are that Occupation is what is your job. Employment is where
do/did you work for what dates.
For example, your occupation might be Nurse. Employment would be the dates
that you worked at a particular hospital.

Looking at the Event Sentence Definitions is a good way of getting a
feel for how events are used in the default.
You can, of course, edit the Event Sentence so you can use the fields
as you like.
