That's because the Source options have now been moved to the "Additional"
tab->Source Options for the Book (it's the second tab after Contents). All
of the items in your book will use the Source settings selected from the
"Additional" tab ->Source Options.

To continue with this workaround suggestion, I would suggest you do
this in a copy of your family file. (I simply dragged a copy using
File Manager/Windows Explorer into the same Legacy Data folder and it
was renamed Copy of MyFamilyFilename.fdb, then opened up that in
Legacy to run my test.)
