You might want to add the following line to your score:
\set Score.timing = ##f
This will remove the automatic creation of barlines.
You can add barlines manually using \bar "|".
But it will also change the behavour of the use of accidentals.
Therefor you might want to add the following code bef

One copy of the music is in front of a (very small) choir, so I need a rather
large font.
To have both scores properly aligned I had to use the command:
\override VerticalAxisGroup #'minimum-Y-extent = #'(-5.8 . 5.8)

I think the y is a typo.

I like to stop a system after one bar, have some white space added and start
the system again (including the systemStartDelimiter, the clef and the key
signature).
I haven't been able to create this with the \stopStaff and \startStaff
commands.
