What I wanted is not just the config, but everything. Say I have installed

Honestly I don't see any good reason to use dd to create a clone of your
config.
It will be a total waste of time compared to the classic install.
The path that I would rather take will be :
1. Classic install with the version that suits
there is no reason to make a entire disk dump.
