A jack-to-minijack plug would work, but most instruments need a PreAmp to boost the volume to reasonable levels. Though with a jack-to-minijack you could hook up an amp to the mac pretty easily, but you will lose instant monitoring if your amp doesn't have more than one output. Aside from that,
