Mercedes sells a tool to check the fluid level. It's basically a 4'
flexible shaft with a plastic level guide on the end. You shove it in
until it bottoms out, then extract and read the level.

430 E-Class is a legit model. It does not come with an AT Dipstick.
You need part number 140 589 15 21 00 AT Dipstick
Rusty has them for $44
If you are careful when removing the plastic insert on the existing
dipstick tube cover, you can reuse them. Push the insert down with a
small flatblade
One other note - there is no drain plug on the Torque converter on the
1999 E-Class. Mercedes decided to save $2.89 per car and doom the
owners to premature failure. You will need to do several fluid
changes. Topside sucking leaves about a quart of fluid behind. You
have to remove the pan, then
I have bought some of those little rare earth magnets that are strong as
can be -- would one of those epoxied to the outside do OK? Not that I
have an E to worry about...

I've not tried that. When placed inside the pan, they pull an amazing
amount of crud out of what otherwise appears to be clean fluid. Same
thing happens when I put them on the older power steering filters -
although I've yet to find the PS filter on the 99. The pan is ferrous.

Ah, hadn't thought of that.
I'll note the W140 hydraulic tank comes with a magnet in the Filter.
It's noted in the parts manual as a Spacer however it's just a
cylindrical ring magnet which is dropped in the
filter.
Therefore I tossed one in the 92 and 83 wagon filter's too when I
changed
