to specify a custom core dump folder in OpenBSD ?
This is the FreeBSD way (AFAIK, OpenBSD does not support it):
sysctl.conf
kern.corefile=/custom-folder/%U.%N.core

not see any references to it in sysctl -a
If not, is there a security reason for it not being supported or can
it be added to a wishlist ?

It is not supported, probably
by some script. Even Python dumps core sometimes.
