You're right, we need to catch them in the act. How about the string runs to
a net in a tree over the bike covered in bells, and a cat. That should
detain them briefly while making a bit of a ruckus to get your attention.

On a more serious note, they do make alarms for when your bike gets moved,
but by the time your bike is moving, it'll be on the ground anyway.
Maybe sit outside with a paintball gun for a little while one of these
nights.
