Unless I got my demos crossed, I thought it could handle open files. You should be able to retrieve a deleted e-mail immediately if I'm not mistaken (I know, bad example)

You could put the information onto a SAN and snapshot it. In that
scenario you could then backup from the snapshot at your leisure as well
as have that realtime backup ready to go. Check with www.datacore.com
they have offices in the UK as well. Another scenario is to backup using
the open files

Seems to me something like livevault (I think that was it) would work.
