Not sure that I can help, but I'm not clear on what you are telling me. Your host is running Server 2008 with Hyper-V. Fine. Got that. Are you telling us that the host is also running DNS, DC, and BE? And that those aren't in guests? And that when it goes to back up a guest the host

Are you using Backupexec to copy that VM? I have a Windows 2003 server with MSVS hosting a BES server (has some Exchange parts), and it the entire host server blue screens every time I try to backup with Backup Exec. It has something to do with VSS, but I have not been able to figure it out.
