Is there a way to read raw data from the flash (such as the baseband
software or other pieces not exposed through the filesystem) from linux?
Would I need to somehow write a kernel module to do it (and then use the
kernel module exploit to defeat the module hash checks?)

If i understood correctly your question,
There is actually some ways to do so, some (if not all) are documented on
http://wiki.openezx.org/Backups especially the newest genblob and bootusb,
that now can read and write to/from the flash chip.
