I've found notes saying that I need Red5 in either way.
Could please someone advise on how to manage Red5 to work under Apache
\Tomcat and configure Red5 to be accessible via web?

You need to re-import all labels into a fresh database.
Just copying the old hibernate.cfg.xml will not work.
In later Version OpenMeetings contains a Backup and Import function.

I just did try download a fresh zip + install => zero Issues. I don't know
what you've exactly done wrong but I don't think its related to openmeetings
