I've used a spotmeter when photographing sunsets, and taken my reading from the spot where I wanted the color density to be approximately that of 18% gray, usually right next to the ball. That retains the color. However, your foreground will be dark. The solution to that is HDR or multiple

Many thanks, Bruce. It doesn't normally strip my EXIF data, and I'm not sure why it did in this instance. Photoshop preserved it in the color version, but for some reason, stripped it out in the b/w conversion. I don't have a clue what may have happened. But, I do normally preserve it.
