Guide" may help give details to zoom in on to rule some out and narrow the
possibilities.

These things are HUGE though, and come out at night. My initial thought was
European Hornet, but I’m no entomologist!

It's a yellowjacket, probably there's a nest somewhere in a wall void and
they are crawling around until they find an opening, then they come out and
die of dehydration. Looks like Vespula sp., probably a german or western
yellowjacket.
