Interesting, it's good to hear someone who's dealt with them. I just
thought it was an interesting advertisement.
My thing is, if it runs Ubuntu then there's a pretty good chance I
could blast the drive and toss Slackware/Debian/Gentoo/CentOS/insert
other distribution on to suit my tastes...

Im not knocking them personally. I find it commendable that they plainly
state their return policy, which unfortunately many vendors like them do
not.
There are some 'macro' problems with these kind of vendors which makes it
very hard for them to compete against the likes of

with Dell since they are geared towards people who don't want to touch

It boils down to being unfamiliar with Linux in this position, which
means you should buy a Windows machine with those questions.
