If you're willing to consider a GRASS GIS solution, then the module v.to.db can upload azimuths of line segments (as well as lots of other measures) to the attribute table. https://grass.osgeo.org/grass78/manuals/v.to.db.html

HI Scot, if you have a qgis window open, and open your finder window, you should be able to drag data sources directly from your downloads folder into qgis. You may need to unzip some of the data sources first. Maybe someone who is more familiar with QGIS on a mac or the tutorial can chime in with

In addition to what has already been mentioned, you can use the QGIS SAGA Toolbox. Under Raster - Rasterizing, there is a Natural Neighbour algorithm. I have not used it, but I have used the Inverse Distance Weighted algorithm for magnetometry data which in essence does something like what you are
