of them dating back to the Chinese immigrants who helped
build this nation*s railroads in the 19th century, but regardless
of the dish*s provenance, it is clear that it is an American original.
Chicken Chow Mein
2 Tbs (30 ml) peanut o
CHICKEN CHOW MEIN & FLUFFY WHITERice
1/4 c. vegetable oil
1 tsp. salt
1/4 tsp. pepper
2 c. sliced Chinese cabbage
3 c. thinly sliced celery
1 can (1 lb.) bean sprouts, drained
1 can (4 oz.) water chestnuts, sliced
2 tsp. sugar
2 c. chicken broth
2 1/2 tbsp. cornstarch
1/4 c. wat
CHICKEN CHOW MEIN
2 green onions, sliced
1/4 c. diced sweet green pepper
1/4 c. chopped celery
1/4 c. sliced mushrooms
1/2 c. bean sprouts, preferably fresh
1 boneless, skinned chicken breast half (about 5 ounces)
5 tbsp. water
1/8 tsp. each salt and pepper
