1/4 c. milk
1 c. pancake mix
12 oz. can whole kernel corn, drained
Fluffy fritters need a light hand, so don't over beat. Drop by
teaspoonfuls into hot oil, 1 inch deep, and cook slowly until golden brown,

A friend's husband, who's a chef, came up with these light and fluffy fritters
accompanied perfectly by a sweet-tart jam. I would never ask a chef to divulge
his secrets, so I created my own version. I serve them with soups and bar
Corn Fritters 1 1/4 cup self-rising cornmeal mix
1 1/4 cups all-purpose flour
1/4 cup sugar
1 teaspoon salt
1 cup milk
2 large eggs, slightly beaten
1/4 cup (1/2 stick) butter, melted
1 (15.25 ounce) can corn, drained
Vegetable oil, for frying
Heat oil to 325 degrees F.

Combine all ingredients and let stand 5 minutes. Fry in deep hot fat a
